Remarkable Shincha Traditional!! I'm not a tea sommelier but I sure know great tea when I taste it. This shincha took me on a real journey. I made this with 82 C water and steeped for one minute and poured every last drop out so my total time was 2 minutes. I actually decanted it into another tea pot and then poured into cups. The first taste on my tongue said "HELLO!" with a very welcome bitter taste. I really don't like to use the word bitter because some people say that's why they don't like green tea. It's not really bitter but more like a tangy taste. That lasted a short time followed by a sort of dry feeling then immediately my mouth started watering a lot. That made an incredibly beautiful sweetness sweep over my mouth. It was funny because my husband looked at me and said this tea hypnotised me! But here is the remarkable thing...I could still taste the sweetness, which amplified over time, for at least a good 15 - 20 minutes after drinking this tea. Here is a fun tip: after you finish the first pot of tea, wait about 10 to 20 minutes (don't eat or drink anything else) and then take a TINY sip of pure fresh water. The sweetness will well up so much it almost hugs you! This is why I say Shincha Traditional takes you on a journey... WOW, my most sincere thanks to the lovely people who made this tea.
