Review | Hibiki-An's Farmer's Shincha is wonderfully complex and interesting. I prefer brewing it at 176 F/80 C to allow for umami notes to compete with aromatic ones. I also made it into iced tea that was amazing. I brewed it western style (one time), 5 level tablespoons to 1100 ml water at 80 C for 3 minutes and pour into a 2 L pitcher 3/4 full of ice. I removed any excess ice, to make 2 L. I like adding one packet sweetener and a few drops lime juice. Crispy green springtime in a glass! |
