The pâtissier developed this original biscotti recipe. Her biscotti has a unique texture, which is gently crispy and crunchy and not too hard like usual biscotti. She bakes the biscotti several times to bring out the gentle texture. The usual recipe calls for baking twice.
Instead of using MISO in its original form, as a moist paste, it is dried and made into flakes before being kneaded into the crust. This is a very time-consuming and labor-intensive process, but by doing so, the taste of MISO can be clearly experienced even after baking.
