This is more than an alternative to gyokuro; it is excellent in its own right. The stems add sweetness to the brew and more depth to the flavour. Because stems are tougher than leaves, the karigane will transform in character across every brew; it is in the later brews that the character of the stems will become more apparent. The character of this gyokuro is bold, with strong umami and some brothiness, but with its own sweetness that reveals itself by the third brew. When we eat vegetables, the sweetest part is not the leaves, but the stems. Why should tea be any different? Like gyokuro, karigane also has different flavour profiles at different temperatures. Unlike gyokuro, however, karigane contains many stems, so it can take higher brewing temperatures up to near boiling (90c). I propose an initial brew of 45-60 seconds at 85c with flash (5-10 seconds) later steeps at higher temperatures. Karigane can take 5 or 6 flash steeps this way. The taste becomes stronger and more vegetal. I encourage to try different brewing temperatures and see what suits you the most! I believe that all gyokuro lovers should try the stems at least once. More than value, karigane is excellent in its own way. |
